SHEEP'S MILK

Manchego Young (3 month)

A sheep’s milk cheese produced in the Mancha region of Spain.  This brand is the most awarded Manchego in the world.  Semi Curado - Young Manchego cheese is aged around 3 months and is supple and moist. The flavor has fruity, grass and hay notes with a tangy finish.

Food Pairing:  salads, crusty bread, chorizo, olives, marcona almonds, as a dessert with quince paste or honey

Wine/Beer Pairing: Sherry, Rioja, Syrah, Sauvignon Blanc, Pinot Grigio, nut-brown ales, stouts and porters

Manchego (6 Month)

A sheep’s milk cheese produced in the Mancha region of Spain.  This cheese is aged for 6 months giving the cheese a buttery, nutty flavor.  Add Marcona almonds and some fig jam to this cheese and you will understand why it is so popular in Spain!

Manchego Reserve (12 month)

A sheep’s milk cheese produced in the Mancha region of Spain.  This brand is the most awarded Manchego in the world.  Viejo - Manchego cheese aged for a year becomes crumbly in texture while the interior of the cheese acquires a butterscotch color. It has a sweet, lingering taste.

Food Pairing: dry fruit cakes, fresh fruit, Marcona almonds, quince paste or honey

Wine/Beer Pairing: Sherry, Rioja, Syrah, Sauvignon Blanc, Pinot Grigio, nut-brown ales, stouts and porters

Pecorino Toscano

A sheep’s milk cheese made in Tuscany, Italy.  This cheese is mild and smooth with a buttery taste.  There are hints of almonds, lanolin and grass with a clean, balanced finish.

Food Pairing:  great on pizza (especially for those lactose intolerant, with dried fruit, honey or fig jam

Wine/Beer Pairing:  Sauvignon Blanc, Pinot Grigio, Rose


Ewephoria

A sheep’s milk gouda produced in Holland.  This cheese is aged for nine months and has a sweet, nutty flavor with notes of butterscotch and caramel.  Food Pairing: melon, mint, prosciutto, mushrooms & polenta, grilled cheese

Wine/Beer Pairing: unoaked Chardonnay, Sauvignon Blanc, brown ale, IPA, porter


Pecorino Romano

A sheep’s milk cheese made by the Locatelli family in Italy.  This is a hard cheese aged for a minimum of 9 months.  The result is a spicy, salty and sharp, dry cheese that is perfect for grating.  This is a great alternative to Parmesan.

Food Pairing: honey and preserves, nuts, salads, pasta, risotto, charcuterie, dried fruit, pears

Wine/Beer Pairing: Chianti, Cabernet Sauvignon, Zinfandel, light lagers

Sauvignon Blanc, pale ale
