Prairie Breeze 

This cheese is a white aged cheddar made in Iowa.  Aged for a minimum of 9 months made from vegetarian rennet and no added color.  Sweeter than a typical aged cheddar with a lot of flavor.  Slightly crumbly without losing the creamy texture.  

Food Pairing:  great to use in Mac n’ Cheese or grilled cheese

Wine/Beer Pairing:  Chardonnay, Cabernet Franc, Cabernet Sauvignon, Zinfandel, Rioja, pale ale, pilsner

This cheddar is made by Deer Creek Creamery in Wisconsin.  This unique cheddar was made to combine the best attributes of cheddars from around the world.  It is aged for 2 years resulting in a bold and complex flavor with a tangy nuttiness.

Barber’s Vintage

An aged cheddar produced in England.  Aged for a minimum of 2 years giving this cheese a sharp, robust flavor with a creamy, smooth texture.

Food Pairing:  chutney and breads, soufflés

Wine/Beer Pairing: pepper red wines such as Shiraz or bitter ales

Cottonwood River (Raw)

A raw milk 2-year aged cheddar made in Kansas on a small farm with milk from their own farm.  This cheese has a full, slightly sweet flavor without the acid bite of a typical aged cheddar.

Food Pairing:  apples, pears, dark bread, melted on hamburgers, fajitas

Wine/Beer Pairing:  Riesling, Gewürztraminer, Zinfandel, brown ales, amber ales, strong pale ale


Beecher’s Smoked Cheddar

A is a smoked semi-hard cow’s milk cheddar made in Seattle.  This cheese has a unique, robust nutty flavor with a fruity essence from the natural hardwood smoke.  It is aged for at least 15 months and smoked over apple and cherry wood.

Food Pairing: omelet, frittata, mac n’ cheese, sandwiches, fondue

Wine/Beer Pairing:  Cabernet Sauvignon, Zinfandel, Syrah, India Pale Ale, Lager
